Be careful not to over-process or the burgers will be too dense. If the mixture is too wet, add more bread crumbs until it forms a sticky dough.

Shape into 4 patties. Heat oil in a frying pan over medium heat. Add the patties and cook for 4-5 minutes per side, until golden brown. Serve on a bun with your favourite toppings - we recommend avocado, tomato, and lettuce!

For the filling:

1 tablespoon olive oil or vegan margarine"½ cup chopped onion"1 stalk celery, chopped"2 cloves garlic, minced"2 cups frozen mixed vegetables"1 teaspoon dried thyme leaves"¼ cup tomato sauce"½ cup water"

Instructions:

Preheat the oven to 375 degrees F (190 degrees C). Grease a 2-quart (2 Liter) baking dish with vegan margarine. Lay the sweet potato slices over the bottom of the dish in a single layer. In a separate bowl, mix together the red potatoes, onion, garlic, carrot, and celery. Add the broth and stir until well combined. Pour the mixture over the sweet potatoes.

In a small skillet over medium heat, melt the vegan margarine. Stir in the flour and soy sauce until well blended. Cook for about 1 minute more. Pour this mixture over the vegetables in the baking dish. Sprinkle with pepper. Bake for 45 minutes in the preheated oven or until potatoes are fork tender.
